At Ellerman House, wine is a big deal. Their cutting edge Wine Gallery houses a collection of 7,500 wines, many of which are rare or impossible to purchase at retail. The gallery includes the finest wines from the Cape’s local vineyards and 20-year old brandy available for tasting in the Brandy Cellar. At the center of the gallery, you’ll find a human-scale corkscrew, designed to hold 1,500 bottles of wine.
And there’s a Champagne cellar located below the wine gallery. This Champagne cellar is the first of its kind in South Africa. It is stocked exclusively with rare and special vintages of Dom Pérignon. It’s a Champagne cave where guests of the Ellerman House can partake in the one-of-a-kind Dom Pérignon Experience.
Together, Ellerman House’s Sommelier and Chef created the tasting experience. It pairs creative South African dishes with Dom Pérignon and is designed to accentuate the different notes of the Champagne. To create the tasting table for the experience, Ellerman House imported a two-ton block of chalk (Champagne’s defining soil material) from the Champagne region in France, cast a bronze mold from it, then broke up the block into small pieces to clad the wall of the cellar.
